Why is it that our once unwavering hopes and dreams fade away as we age?

It's just because we become more realistic, and as we age we have less time, and therefore less potential. Though I think the main reason is simply everytime you're disappointed, you expect a little less the next time, so you don't get hurt again. After every failure, you aim a little lower.
